Stockpiling Low Carb Items...

I had a wake up call about 2 years ago and took serious action about my weight. Since then I'm thrilled to report I'm LITERALLY almost half the person I was!

That said....I've always known that starchy carbs are NOT my friend. Pasta, rice, oatmeal, bread, etc. turn to fat when I consume them in any meaningful quantities!

I think you can see my conundrum. High/starchy carbs are the backbone of long-term stockpiling. I do have SOME FD fruits, veggies, and meats but not enough to make a big difference.

Here's my solution. I've drastically increased my dehydrating. I'm working on low-carb veggies like broccoli, cauliflower, green beans, mushrooms, and zucchini. I'm vacuum sealing them in mason jars with my Food Saver lid adapter.

I've ordered 64 oz. Ball jars from Ace Hardware. They have a wide mouth and will hold a LOT of my dried veggies!

I've also done some wet canning but, dried food weighs less and takes up MUCH less space.

If you're in a similar situation, please add your input. What low-carb options are you stockpiling?

Good ideas!

I have my own dietary limitations that I have to abide by and have planned accordingly. Unfortunately, those are medically required restrictions so I can't fudge it if needed.

If you are low carb to keep weight off, keep in mind that in a SHTF scenario you will be working so hard that you'd be lucky not to become underweight.

LOL! You sound like my DH. He reassures me that I'll NEED the carbs we've stockpiled. I tend to agree, but to err on the side of caution, I'm continuing to dry my zucchini chips.
